How to get a cook internship? Overview of interesting culinary schools in Russia and abroad

Unfortunately, professional cook education in Russia can only be obtained at schools and colleges. But this level is not enough to work in serious institutions. The way out is to take an internship with chefs in private culinary schools or foreign institutes.
NOVIKOV SCHOOL (Moscow, Russia)

It offers three areas of study: amateur (including for teenagers), professional and restaurant management. Culinary and restaurant business is taught by Arthur Ovchinnikov (Bocuse d’Or Russia Gold Medal, 2015), Cheese Chef Alexei Medvedev and more than 150 teachers. The price includes a professionally equipped workplace, clothes (shoes are yours, if you plan to do the cooking business professionally, it’s better to choose the right one right away), electronic manuals and access to online lessons. Graduates become members of a closed community, they are promised invitations to lectures, master classes, meetings with famous chefs, excursions “backstage” restaurants.

The cost and duration of the courses is different. You can learn the secrets of the best dishes of the restaurants of Arkady Novikov (the founder of the school) for 8 lessons and 64,000 rubles, but the full cook course is already 138 lessons (recipes for 11 national cuisines) and 820,000 rubles. You can come right to the 2nd or 3rd level, the record – according to the test results. A school diploma is issued only by the results of fairly rigorous exams.

Culinary School of the SWISSAM Institute (St. Petersburg, Russia)

The institute is accredited by three international organizations, including the American Culinary Federation (ACF), issues an international diploma of ACF Diplomain Culinary Arts. The training takes 6.5 months; students are promised the largest educational cuisines in Russia. The basis of the program is classic French cuisine, elements of Italian, Asian and other directions are added. Internship at partner restaurants.
